Francia - Il Sauternes
Siituata sulla riva sinistra della Garonne a 40 Km da Bordeaux,Sauternes e' una delle piu' piccole zone D.O.C. Bordolesi.
Si compone di 5 comuni Sauternes,Barsac,Preignac,Fargues et Bommes.
Il territorio con un terreno ricco di silice e calcare,gode di un microclima favorevole per la viticoltura.
L'originilita' essenziale e il gran segreto del successo del Sauternes risiede nel fatto che l'acino d'uva viene cristallizzato dalla Botrytis Cinerea.
Il fungo tramite questo processo assorbe l'acqua ed aumenta il contenuto di zucchero che si sviluppa progressivamente per cui la vendemmia avviene in diversi passaggi e puo' durare anche 2 mesi
Le regole di produzione pertanto impongono una raccolta a mano ed un rendimento limitato di 25 Hl per ettaro.
Il processo della Botrytis Cinerea permette di ottenere un vino molto ricco e concentrato.
ll Sauternes è prodotto prevalentemente con uva Sémillon, alla quale si aggiunge una parte di Sauvignon Blanc e - occasionalmente - piccole quantità di Muscadelle.
